Once you have a strong grasp of your menu and storage needs you are ready to shift your focus to obtaining and designing your truck. In certain situations you may find yourself with a truck before you’ve planned your menu, and that’s perfectly fine. If that’s your situation you can reverse engineer a menu that works for your truck, or consider modifying it to meet your specific needs. However, if you’re in a position to plan the layout of your truck around your menu that is certainly optimal. The first food truck I ever owned I purchased because it was the best deal I could find. I had very limited capital to work with, so taking this approach made sense at the time. When I purchased a second food truck a few years later I was able to specify its design specs. More than a luxury, having a truck that was built with my concept in mind made huge differences in the way I could store product and the efficiency at which I could operate.
