Meet Tim

Hi! I’m Tim, a veteran restaurateur with more than 20 years of hands-on ownership experience.  I opened my first restaurant on a shoestring budget at the age of 23 and developed my concept, Franktuary, into a household name across western Pennsylvania.  In my years at the helm of Franktuary I oversaw four brick-and-mortar establishments and two food trucks.

At the beginning of my career, I would have benefited tremendously from a knowledgeable guide and a clear blueprint. However, I didn’t have the financial resources to pay the steep prices that traditional hospitality consultants and business advisors charge until many years later.  With no other option, I forged my own path and learned many challenging lessons along the way.

I have always been passionate about street food of all types and am an expert in food truck operation.  Even though food trucks often compete with one another, I also see them as a collaborative force that can experience more success when working with one another in community.  I have coached scores of people toward food truck success and have also spoken on the subject in an array of academic settings ranging from a suburban Pennsylvania public middle school to a private university in Cochabamba, Bolivia.

I am keenly interested in modern food systems and food sourcing, the welfare of service industry employees, and profitable business operation.  The best street food I have ever eaten is in Tokyo, Japan.

Food Truck Insight is my love letter to my younger self.  My goal is to assist aspiring and already established food entrepreneurs to reach their full potential without causing undue financial strain. Food Truck Insight offers a comprehensive food truck start up and operations course with detailed video and text lessons on a pay-what-you-can-basis. It also hosts a monthly podcast, where I conduct in depth interviews with other food truck experts. Additionally, I write topical food truck blog posts as requested by my audience. I am available for one-on-one consulting, and seek to build an online community of food truck operators as supportive as the ones that already exist in various locales around the world.
