The ability to book high quality events is what separates average food trucks from highly successful food trucks.  It takes discernment to know when to accept an invitation and when to politely decline.  It takes an even more nuanced approach to determine when to pay a fee or when to charge a minimum, not to mention how much to pay or charge when appropriate.  This unit covers best practices to ensure that you consistently land high quality, profitable gigs and, when applicable, retain them for years to come.  Once you master these skills you will not need to look for places to operate.
